This winery was founded as a cooperative in 1930. The founding members were 34 men, who at the time had small wineries at their homes but they decided to join together to generate a company that would allow them a greater transcendence and economic progress. In the first instance they were helped and guided by the "Federación Agraria Argentina" and the cooperative grew rapidly.
In 1940 the cooperative movement arrived in Chilecito (located in the province of La Rioja), and decided to acquire first a winery in the west of La Rioja in Villa Unión and then another one in Tinogasta (province of Catamarca).
In 1989 the companies of the group separated and continued as a cooperative until 2000, when the cooperative went into bankruptcy. At the end of that same year, it was acquired by the current owners at public auction, who formed "La Caroyense S.A.".
As for the varieties grown in Colonia Caroya, this winery has 92 hectares of vineyards that provide part of the grapes that the plant uses for winemaking. In this new era, the following varietals are added to the family: Malbec, Cabernet, Merlot Ancellota, Suavignon, Chardonnay and also Tanat.
These sparkling wines are made using the "champenoise" method, a procedure used to make sparkling wine in the Champagne-Ardenne region. After a first fermentation and bottling, a second alcoholic fermentation takes place in the bottle. The process takes approximately two years.
